Crockpot Wednesday
It has become harder and harder for me to get at least one home cooked meal cooked for Andy and I at least one night a week.
But this cooler weather has had me thinking, remember this post??
The one where I explained my new ideas about starting Crockpot Wednesday.
Every Wednesday I will be sharing a new crockpot recipe that I have tried.
Crock-Pots are easy for a number of reasons, but the best one being that things are fully cooked and ready to dump into a bowl as soon as you finally get home.
On Wednesdays, Andy and I rush back to his house after AWANA at church in time to watch our favorite shows Modern Family. I have figured the easiest way for us to get an actual meal is to cook ahead of time.
Last week's recipe was
Chicken Pot Pie Dumplings
Here is the super easy recipe.
I pretty much mixed up a bunch of recipes that I had found and ended up with this.
Ingredients:
4 boneless skinless chicken breasts
2 cans cream of chicken soup
2 cans Veg-All
chicken broth
salt/pepper
small can of pop-can biscuits
Add chicken, cream of chicken soup, and 1 can of veggies to the crock-pot, pour over enough chicken broth to cover.
Let this cook for 4-5 hours on low.
1 hour before:
pull chicken out and shred, add other can of veggies, flatten and cut biscuits in half, layer on top, slightly pushing them into broth/soup mixture.
let this cook for another hour, until biscuits are no longer doughy.
I think the dumplings being on top make this a cross between a pot pie and dumplings.
It turned out pretty good, and I definitely think we will try it again.
I forgot to take pictures, but I promise to be better in the coming weeks.

yum!!! I plan on making chicken cashew something tomorrow in the crockpot. I found it on pinterest of course!
I made French Onion Soup in the crock the other night.
Recipe:
6 large or 9 small onions- sliced to the thickness you prefer
4 cans of beef broth
1 packet of french onion soup mix
Worcestershire
Garlic Powder
Directions:
-I put my onions,beef broth, and onion soup mix into the crockpot. I also added about 4 T of Worcestershire sauce and a couple of shakes of garlic powder to the mix as well.
-I cooked the soup on high for about 7 hours.
Top with swiss cheese and croutons!
